Well of course, if you want it crunchy it’s ok. it changes the flavour, so I’d say usually you don’t cook it. The same goes for prosciutto crudo and speck and stuff like that (otherwise they become very salty as they lose water).
As always, there are many exceptions in cooking!
That looks like mortadella to me and you shouldn’t put it in the oven because it would dry out!
I’ve put chopped mortadella on pizza before cooking, it gets a little crusty, it’s good.
