I had a 6 burner induction installed, 220v 70 amp line, I can set the exact temperature of the cook surface and give an absolutely perfect steak rare in the center with a nice char on it…
And it can boil a pot of water in 45 seconds.
I used to be gas only, but fuck these things are nice when you get the real induction installed and not one of those 110v paper wights.
110v just isn’t enough to drive the pulses that induction uses.
The main issue I have with inductions are woks, you need a specific concave induction cooktop for woks so it heats it up properly. But induction is almost always better otherwise.
Also, gas contributes to indoor air pollution, and can cause buildings to explode if it leaks.
Flat bottom carbon steel woks solve this issue really well. I use the top pick there on an electric burner cooktop, and the thing gets stupid hot very, very fast and produces really good stir fry with the fine char that you expect from a wok.
Yes! I got a medium sized one for like $9 at a big Asian store years ago only cause I had one of those glass top stoves(never making the mistake of getting another glass top again!) and it was fine. But the thing fucking shines way above is weight class on my single burner 110v plug in induction top.

Hard disagree, my single burner 110v is absolutely killer.
