I got rid of stuff like the AI core and the battery life was horrendously ass, so I had to re-enable it. Besides from that, I have de-blowed at every Google service except the Play Store and services just because I need a few apps. Over 95℅ of my apps are all FOSS

Have you tried using MicroG or Auroura instead of Google Play? You can actually turn Play off with adb.
Also, you can request Samsung not to collect your data if you contact them.
