The Bible says that the ruling class is ruling because God wills it, every ruler has been carefully selected by God. It says so repeatedly throughout the Old and New Testament.

The Bible is pro oppression, and has been quoted to defend the ruling class for seventeen centuries or so. God says that only He can judge them, but not you.
That’s where the “According to what churchgoers are told, at least.” part comes in. They don’t care, which is why Christians ignore that one despite it being right there in the Bible. Historically, it was probably because shellfish didn’t store well in the desert and was likely to make you sick.

Not sure I am reading the new Testament right but Jesus, quite frequently, did not sound terribly observent to the ruling class to me.

The Bible is a lot of things. Like I said, Jesus also said a lot of things that were not terribly subservent to the elite.
