It was the yeast they could do.
Swap the baker for electrician and it’s makes more sense.

Because he used all of his yeast for wine and beer!
Bread yeast doesn’t work so well for wine since it has a lower alcohol tolerance, meaning fermentation won’t go as far. But maybe he was making bread with wine yeast, which would be interesting!
