The only baijiu I have ever bad tasted like the worst medicine child me could have ever imagined. Still drank the bottle but it was unpleasant.
Mid range baijiu is fine, but holy shit cheap baijiu is a plot by the CCP to discourage drinking.

The absolute worst baijiu is the stuff that doesn’t even come in a bottle, its kept in a huge barrel and they fill a jug up for you.
It tastes especially disgusting, but after a while you can taste the sweetness. This is a sign you’ve already drank too much.
I’ve had that at a buffet, I wasn’t paying attention and didn’t read the “白酒” in big text, and assumed it was water. Maybe it was the full glass of baijiu talking, but it didn’t seem as terrible as the green bottle with the red star.

What are your thoughts on Ming River? I’ve been liking it, but it’s also the only brand to such I have access.
I despised it, tasted like medicine. Maybe I just don’t like baijiu though
I haven’t tried that one, and I can’t read the bottles I’ve tried so I can’t offer recommendations.
Edit: this is the best cheap stuff, <3 USD/100ml, and merely tastes like perfume. Its good with excessively spicy food.

AFAIK baiju is basically doing the same thing as Jamaican rum, which can get pretty intense and weird. Complex biochemical process that turns fermentation byproducts into aromatic esthers (among other things), possibly involving “muck pits” (to cultivate relevant bacteria/yeasts) and AFAIK possibly involving straight-up pouring acid into the fermentation vat (I assume that’s not really a common thing in Jamaica nowadays, but it wouldn’t suprise me with cheap baiju).
