Lactose intolerance is also the default - we evolved to stop drinking milk after childhood. Only eastern Europeans (and a few other areas) gained lactose tolerance due to access to cow breeding.
Forcing an animal to continuously breed and steal the calf away to steal the milk is a little weird…
I just skimmed the video again, and in the vein of being fair, he did revert to being intolerant over the period of 18 months and is considering changing it up and doing it again in the future. He can’t just use the same virus, (he’s now immune) and he’d need to change up how it’s done so it doesn’t fade when his intenstines schlough off over time.
